Pea Guacamole

A recipe from the kitchen of the “Belétage” at the Hotel Post am See, Traunkirchen

Ingredients for 4 people

250g frozen peas
1 teaspoon baking soda
Salt
50 ml olive oil plus oil for dressing
50 g fresh coriander
50 ml vegetable soup or water
Cayenne pepper
2 untreated limes

Preparation

Cook the peas in boiling water with 1 teaspoon of baking soda and salt until very soft, strain and rinse. Set a few peas aside. Blend the remaining peas in a blender with olive oil, most of the chopped coriander and stock to a smooth cream/paste. Season to taste with cayenne pepper, lime zest and juice and serve with whole peas, olive oil and coriander.
