Ausseerland

Fishing on the Traun Rivers

Fishing on the Traun rivers in Ausseerland means fishing on a body of water that fly fishing legend Charles Ritz said was the jewel of Central Europe. The waters are managed close to nature. In this context we ask you to behave as considerate as possible towards the fauna and flora. Only fly fishing with artificial flies (dry flies, wet flies, nymphs and jigs) with a gentle hook or a barb is allowed. Additionally attached lead balls or lead heads are not allowed. The fly fishing season in Ausseerland-Salzkammergut runs from April 15 to October 31.

Mondsee-Irrsee

HOSTLY FRIENDSHIP - at the Aichingerwirt on Lake Mondsee

Honest, sustainable and traditional cuisine, combined with a touch of modernity, is served by Michael Ellmauer in the Aichingerwirt in St. Lorenz/Mondsee. Coupled with a passionate hospitality and innovative concepts, the family-run inn is not only worth a visit from a culinary point of view!
The first beer went over the counter at the Aichingerwirt in St. Lorenz/Mondsee as early as 1854.
At that time it was served by the great-great-great-grandfather Michael Ellmauer. Today, 167 years later, Michael Ellmauer (junior), chef and managing director of the Aichingerwirt, has taken over the business in the 6th generation.
We visited him in his sunny garden and talked to him about his diverse craft, dedication, creativity and awareness of regional and seasonal products.

The City Nature Challenge is an international event organized by the California Academy of Sciences and the Natural History Museum of Los Angeles County.
In the Challenge, different regions or cities compete against each other in a friendly competition and try to observe and document as many wild animals, plants and mushrooms as possible in their city / habitat.
The data you gain is an important contribution to science and species protection!

Season the knuckles well with salt, pepper and rosemary.

Heat the oil or clarified butter in the pan. Sear the knuckles in it over high heat, brown the onion cubes on the side. Transfer the meat to a roaster. Then add the tomato paste to the onions in the pan and deglaze with red wine. Add the contents of the pan and the pressed garlic cloves to the meat. Let simmer with lid for approx. 90 minutes. Then remove the knuckles from the stew and keep them warm. Remove the garlic cloves from the stock and puree the rest with a hand blender. If necessary, use some mixed cornstarch to make a creamy sauce.
