Duet of Gosau Filet of Ox and Wolfgangsee Filet of Char

with potato-leek patties and red radish salad

[Translate to Englisch:]

  • 4 slices of Gosau filet of ox at 150g each
  • 4 pieces of Wolfgangsee filet of char at 80g each
  • Salt, pepper
  • Olive oil for roasting

Potato patties:

  • 500g of floury potatoes
  • 2 egg yolks
  • 150g of leek
  • 120g of coarse-grained flour
  • Salt, pepper, nutmeg


  • 1 bunch of red radishes
  • Some chives (preferably wild chives)
  • 3 tbsp of sherry vinegar
  • 2 tbsp of water
  • 3 tbsp of walnut oil
  • Salt, pepper


Roast filets of ox and char on both sides in an oiled pan for about 1.5 – 2 minutes.

Preparation of Potato Patties:
Boil and press potatoes, add yolk, flour and chopped leek, mix and season; cover your hands in flour and form patties with your hands; roast in an oiled pan until golden-brown.

Preparation – Salad:
Wash red radishes, dry and grate; add finely chopped chives and add marinade.
