Kriemandl Recipe – Spare Ribs

served with fresh bread

for 4 portions:

  • 2kg of pork spare ribs
  • 6 garlic cloves
  • 2 onions
  • Whole caraway seeds
  • Salt, pepper
  • Lard

Cut ribs into pieces (2-4 ribs) with a sharp knife and rub with salt and pepper.
Grease a roasting or baking tray with lard, and place quartered onions and sliced garlic cloves evenly in it. Put the spiced spare ribs on top. Add water and let roast in the oven (180°C) for approximately 2 hours. Add some more water after half an hour of roasting. Later on baste with own juice from time to time.
