Juicy Roasted Lamb Shanks

INGREDIENTS

  • 4 rear lamb shanks
  • 4 cloves of garlic
  • 1 onion
  • soup/root vegetables (parsley, carrots, leeks, celeriac)
  • salt
  • pepper
  • thyme
  • rosemary
  • basil
  • chervil
  • savory

 

DIRECTIONS

  • Salt and pepper the lamb shanks and season with herbs.
  • Roast lamb shanks with garlic, onion and root vegetables in oven at 170° C for approx. 1.5 hours.
  • After a half hour, baste generously with water or stock.
  • For the sauce, puree root vegetables, onion and garlic. Mix with the meat drippings, thicken with flour and season to taste.
