Potato Dumpling

Filled with Feta Cheese and Spinach

Put spinach in a sieve to drain, add grated feta cheese,
spices and breadcrumbs.
Make little dumplings and freeze.

Let boiled, peeled potatoes cool off and crush.
Add flour, butter, yolks and herbs and knead to form a dough.

Cover the frozen spinach dumplings with the potato dough
and let simmer in water for about 15 minutes.

Garnish with brown butter, fresh herbs and grated Parmesan cheese
