Filet of char – Styrian way
Recommended side dish: parsley potatoes
- Boil the root vegetables in salt water until firm to the bite.
Salt the filet of char slightly, roast in some oil on both sides.
- Brown onions for the Riesling sauce and add Noilly Prat and Riesling. Wait until only half of the sauce is left. Add cream and let boil. Add cold butter cube and mix with blender until creamy. Season with salt and pepper.
- Place filets of char on a plate and add root vegetables with the sauce, pumpkinseed oil and garnish with pumpkin seeds. Finish it off with freshly grated horseradish.
