Knödl Alm – authentic pleasures

For Knödl-Alm duo Sandra Neuper and Alfred Bohn it is no balancing act to combine tradition and innovation, farming and tourism and manual work and modernism.

Being a guest of Knödl alm means to experience traditionalism and authenticity and to understand agriculture and tourism as a unity.

Whatever is won by manual work from the soil finds its way to the plate. Excellent homemade fruit juices, cider and schnapps are served. The schnapps distillery is located amidst the parlour and makes it easy to grasp the production process.

Produce that has to be bought is addition comes almost exclusively from farmers. The top caterers take great care to buy fair-trade exotic products and stimulants like cocoa, coffee and some spices. “It goes without saying that the knowledge on justice in the production process is also part of enjoying”, states hostess Sandra Neuper.

”Nome nest omen” it is almost all about dumplings (German: Knödl). One can enjoy fantastic char dumplings or green-white Styrian dumplings with spinach-cheese filling. Heartier are the farmers’ dumplings or the embrowned crackling dumplings. Last but not least the culinary spoiled palate ends up with enjoying elderberry, cherry or blackcurrant schnapps, unless one has a fondness for fluffy, delicate apricot dumplings with sugar crumbs.
